A Red Snapper Friday

For some persons, Friday is “Fish Day”, as long as the fish is available for cooking.  Today we’ll be having Red Snapper.Red Snapper in kitchen sinkWe cut our snappers in halves since our family has younger ones.

We season the snappers with salt, black pepper, hot pepper and onions and let it rest for awhile.  101_1714Afterward, we flour each half lightly with flour that is mixed with other spices. They are now ready for frying.101_1716After frying, we place the fried snappers into boiling gravy consisting of  ketchup, onion, escellion, ginger and hot pepper. Today, we’ll be trying something new and will include mayonnaise in the gravy.

Make sure each fish is covered with gravy and let it  simmer for just two minutes, then serve.

Here’s today’s dinner: Rice with corn, fried plantains, red snapper and steamed callaloo.
