We season the snappers with salt, black pepper, hot pepper and onions and let it rest for awhile. Afterward, we flour each half lightly with flour that is mixed with other spices. They are now ready for frying. After frying, we place the fried snappers into boiling gravy consisting of ketchup, onion, escellion, ginger and hot pepper. Make sure each fish is covered with gravy and let it simmer for just two minutes, then serve.
Here’s today’s dinner: Rice with corn, fried plantains, red snapper and steamed callaloo.
