If you are looking for another way to cook corned beef, you can try making meatballs. Corned beef is also called bully-beef in Jamaica; and the secret to making these meatballs is to add boiled mashed potatoes; my aunt Gloria also add grated raw carrots.
For eight medium sized bully-beef meatballs use:
1½ cup mashed potatoes
½ cup corned beef
Herbs: (1 tablespoon chopped escallion, 1 tablespoon diced onions, 1 teaspoon hot pepper, 1 teaspoon chopped garlic, ½ tablespoon chopped sweet pepper and 1 teaspoon thyme leaves)
¾ cup grated cheese
½ cup bread crumbs
1 egg beaten
1/2 teaspoon black pepper
* Combine the mashed potatoes with the corned beef, then mix in the herbs. After this, stir in the grated cheese and bread crumbs; add the beaten egg and sprinkle in the black pepper. Combine.
* Roll one heaped tablespoon of the corned beef mixture into a ball. You should get approx. 8 balls. Roll balls in flour and fry.
Gently sauté herbs (i.e. one tablespoon diced onion, one small clove of garlic chopped, ½ tablespoon chopped escellion, sweet pepper sliced and three crushed pimentos) in two tablespoon oil. Mix in 3/4 cup ketchup, then add 1½ cups boiled spaghetti and two cups water. Bring to boil, then simmer for one minute. Add in meatballs and cover with sauce; continue to simmer for approx. 2 minutes more. Serve.
