Cornmeal is an important yet missing item in the diet of most persons. Because of its many health benefits, we cook with cornmeal every week. Today we had Cornbread cakes for breakfast. Cornbread cakes are simple and easy to make. The recipe requires:
1 cup flour
¾ cup cornmeal
2½ tsp baking powder
¾ tsp salt
¾ cup milk
¼ cup oil
1 tblsp honey
¼ cup raisins
1. Sift together dry ingredients.
2. In another bowl, beat the eggs and mix in the milk, oil, honey and raisins.
3. Combine mixture with the dry ingredients and stir until moist.
4. Pour into prepared tins and bake at 350oF for 10 minutes or until ready.
William cooks cornmeal porridge at least once per week. It is gluten-free and rich in fiber which promotes a good bowel movement. Cornmeal porridge is a popular breakfast item here in our island.
In Jamaica,whenever we see a skinny person, we always say he/she needs some cornmeal porridge to fatten up.
I understand that cornmeal contains Vitamin A, Calcium, Potassium and Phosphorus. It is also rich in antioxidants known to prevent cancer, macular degeneration and cardiovascular disease. Cornmeal helps promote colon health and prevents constipation.
The fiber in cornmeal also lowers cholesterol levels and it is beneficial for managing diabetes.
