1 tablespoon chopped onion
2 teaspoons chopped escellion
1 teaspoon chopped sweet pepper
1 teaspoon thyme leaves
4 tablespoons flour
Oil for frying
1. Combine the shredded raw Irish potato with cheese, sausage, tomato and herbs – onion, escellion, sweet pepper and thyme.
2. Add salt and black pepper and mix ingredients together. 3. Use a fork to beat in the egg.
4. Mix in the flour.
5. Heat the oil and add the batter by spoonfuls into the saucepan. 6. Cook over moderate heat, turning the fritter until each side is golden brown.
7. When fried, shake fritter to remove excess oil, then plate.
