Fried Rice

There are different ways of using up your leftover rice – to make rice pudding, for cooking a one-pot meal, but today we’re using it for fried rice.

Making Fried RiceIngredients:
2 cups cut cabbage
1 small carrot, sliced
A dash of salt
¼ cup tin green peas (optional)
¼ cup tin corn (optional)
1 cup cubed meat
1 tablespoon chopped tomato
½ teaspoon crushed pimento
½ teaspoon thyme leaves
1 clove garlic
2 tablespoons chopped onion
¼ teaspoon chopped hot pepper
1½ teaspoons sweet pepper
1½ tablespoons escellion
1 tablespoon cooking oil
2 cups boiled rice
1 egg, scrambled
3 tablespoons Chinese Soy Sauce

We eat fried rice about once every two months . . . it is tasty and filling; and this is one method of cooking it.

1) Lightly steam the cabbage and carrots with a dash of salt. When finished, drain excess water.
2) Add the cubed meat to the steamed vegetables. Making Fried Rice3. Stir in the tomato, pimento, herbs and cooking oil. Cover the pot and let it simmer for approx. two minutes. Making Fried Rice4) Add the rice with the green peas and corn, and keep stirring the meal to prevent it from burning.Making Fried Rice5) Next, include the scrambled egg and mix well (Nb – always add the scrambled egg last).
