Shepherd’s pie is usually made with ground beef or ground lamb filling, but in our home, we prepare it with callaloo filling instead. It is actually enjoyed as one of the side dishes eaten with our Sunday dinner.

Callaloo Shepherd’s pie is made in a slightly similar fashion as other Shepherd’s pies and this is how we do it (with or without cheese).

1. Boil the Irish potatoes in salted water until tender.

2. Steam your callaloo (this previous post shows how we steam ours).

3. Place chopped herbs (escellion, sweet pepper, etc.) and finely shredded cheese inside a bowl.

4. Mash the Irish potatoes upon the chopped herbs and cheese until smooth.

5. Add a thin first layer of mashed potatoes at the bottom of your baking dish.

6. Next add the steamed callaloo upon the first layer of mashed potatoes.

7. Then place an even layer on top of the steamed callaloo with the remaining mashed potatoes.

8. Run a fork along the top layer of mashed potatoes in rows to create a pattern then poke the top layer with the fork.

9. Garnish with a sprinkle of parsley flakes or flax seeds.

10. Bake @ 350oF for approx. 30 minutes or until the top crust is slightly golden.

Callaloo Shepherd’s pie may be served straight out of the oven but it is also enjoyed when it is warm or cool. This dish is an absolute favourite for my nephews.
